 The Basic Positions in A Kitchen Brigade

  • Head Chef – sometimes referred to as Chef de Cuisine, the highest ranked role in the kitchen and are still directly involved in food preparation amongst other responsibilities.

    • Commis II – Generally have three to four years of experience and can lead and work on the line.

    • Commis IV – Usually fresh out of school or are interns.
